Stovetop Mac and Cheese

Ingredients

2 cups (8 oz) elbow pasta

1 cup Swiss, shredded

1 cup Cheddar, shredded

3 tablespoons butter

3 tablespoons flour

1 cup milk

1 cup half and half

Salt, to taste

Pepper, to taste

For Baked Mac and Cheese:

2 tbsp butter, melted

1/4 cup parmesan cheese, shredded 3/4 cup panko bread crumbs

Instructions

Cook pasta according to package instructions for al dente pasta.

While pasta is cooking, measure and prep other ingredients. Shred cheese and set next to stovetop.

Strain pasta and set aside, reserving some pasta water in a container. TIP: You can toss pasta in oil to prevent sticking, but when it is added back to the sauce it will un-clump with stirring.

Return pot to the stovetop on medium heat.

Add butter and flour, stirring regularly until combined. Continue to stir for 1-2 minutes, until nutty and golden.

Slowly add in milk and half and half, stirring pot until well combined. A whisk may be handy.

Bring to a light boil, and cook for 2 minutes until thickened.

Cut the heat. In handfuls, add cheese and stir. Once all cheese is incorporated, add back the strained pasta and stir to coat. If the sauce is too thick, add a little of the reserved pasta water and stir to thin it out.

Baked Mac and Cheese

Continue after step 8 with the following instructions:

Preheat oven to 350 degrees F.

Grease a casserole dish.

Fill casserole dish with macaroni. TIP: Casserole can be stored in the fridge up to overnight at this point. When ready for the next step, let rest at room temperature for 30 minutes before proceeding.

In a small mixing bowl, combine melted butter, Panko breadcrumbs, and Parmesan cheese.

Top mac with breadcrumb mixture.

Bake for 30 minutes, until golden and bubbly. Enjoy!
