Ingredients

Whipped Italian Cottage Cheese  

1 cup 2% milkfat cottage cheese 

1 clove garlic, skin removed 

1 teaspoon olive oil 

Β½ teaspoon dried oregano 

ΒΌ teaspoon dried thyme 

ΒΌ teaspoon salt 

Black pepper, to taste

Pizza Toast 

4 slices Italian bread or other rustic bread

Β½ cup Whipped Italian Cottage Cheese 

4 tablespoons marinara sauce 

16 slices turkey pepperoni or regular pepperoni 

4 tablespoons shredded Italian cheese blend 

4 fresh basil leaves, torn into pieces

Instructions

Whipped Italian Cottage Cheese

Place cottage cheese, garlic clove, olive oil, oregano, thyme, salt, and black pepper in a food processor. Blend until cottage cheese looks smooth. Spoon cottage cheese mixture into a bowl or storage container and set aside. Recipe makes about 1 cup of the cottage cheese mixture.  

Pizza Toast

Toast bread slices until golden brown. Spread about 2 tablespoons of the Whipped Italian Cottage Cheese into an even layer on each slice of toast. Top with marinara and spread into an even layer. Add 4 slices of pepperoni to each toast and sprinkle about 1 tablespoon of shredded Italian cheese blend on top. Bake pizza toast in a toaster oven or conventional oven at 400˚F for 5 minutes, until cheese is melted. Top with basil and enjoy.
