Ingredients
FOR BASE:
2/3 cup heavy cream
1 tablespoon butter
Salt, dash
8 ounces chocolate, chopped or chips
DECORATION IDEAS:
Melting chocolate or white chocolate
Sprinkles
Chopped nuts
Cocoa powder

FOR BASE:
Chop chocolate into pea-sized pieces or measure out your chips. Set aside.
Use a pie dish or other microwave-safe bowl, add heavy cream, butter, and a dash of salt.
Microwave on high and stir in 30-second intervals for 80-90 seconds. Watch carefully that it does not boil over.
Immediately add chocolate to hot cream mixture. Let sit 15 seconds. Stir with a spoon until the chocolate has melted. It should be smooth and glossy.
Cover and refrigerate at least 3 hours or overnight.
FORMING:
Remove truffle base from fridge. and check with a spoon to see if it is malleable enough to form into balls (It may need to sit at room temperature for before it is workable).
Use spoon to scoop about a tablespoon of the mixture into your hands and roll into a smooth ball. Repeat with remaining mixture. If it gets too soft to work with, refrigerate.
If softened, cover and return truffle balls to fridge until they harden.
DECORATING:
Choose an option below. Cover and refrigerate decorated truffles until ready to serve!
CHOCOLATE-COVERED TRUFFLES:
Melt candy melts or chocolate according to package instructions.
Working quickly, use a fork to lower truffle ball into melted chocolate. When covered fully, lift out of melted chocolate and place on a parchment paper-lined plate or tray that can go in the fridge after.
COCOA-COVERED TRUFFLES:
Roll truffle balls in cocoa powder.
SPRINKLE OR NUT TOPPING:
Shake sprinkles or place nuts on top while chocolate is still wet.
DRIZZLE:
Let chocolate-covered truffles solidify for a few minutes, then drizzle melted chocolate on top of them with a spoon. Use quick flicks to avoid puddling.
