Ingredients

2 ounces Cheddar (1/2 cup after shredded)

1 tablespoon butter

1 tablespoon flour

1/2 cup whole milk

1 egg, separated

Nutmeg, to taste

Salt, to taste

Pepper, to taste

Instructions

Shred the cheese and set aside.

Heat a saucepan over medium and add flour and butter. Stir continuously for 1-2 minutes until golden and nutty.

Whisk milk in, stir until mixture comes to a simmer. Simmer until thickened, then set aside to cool.

Preheat oven to 400 degrees F.

Separate egg white from yolk, and put in two separate bowls.

In a large mixing bowl, combine egg yolk, grated cheese, cooled roux, nutmeg, salt, and pepper. Stir to combine.

In other bowl, beat egg white until foamy stiff peaks form. Next gently, fold egg white mixture into other mixture in two batches.

Fill 2 6-oz buttered ramekins with mixture.

Bake for 22-25 minutes. Let cool briefly and enjoy!
