Dairy Farmers Celebrate Ice Cream One Scoop at a Time
July is National Ice Cream Month, and dairy farmers sure do love to celebrate every moment of it! Did you know ice cream is the second most consumed dairy product across the Southeast? It takes 3 gallons of milk to produce 1 gallon of ice cream, meaning each cow on family-owned dairy farms can produce on average 2-3 gallons of ice cream per day!
With all that delicious ice cream to enjoy, here is how some of these dairy farm families are celebrating ice cream this month.

Rocky Road Ice Cream
Ingredients
2 ½ cups whole milk
8 oz semisweet chocolate
2 cups granulated sugar
½ tsp salt
1 can evaporated milk
1 ½ tsp vanilla
4 cups cream
2 cups mini marshmallows
1 ¾ cups mini chocolate chips
1 ½ cups chopped pecans
Directions
Combine semisweet chocolate and milk in a double boiler. Heat over low until the chocolate is melted. Remove from heat. Add sugar, salt, and remaining ingredients and stir to combine. Cover and refrigerate until chilled. Place mixture in ice cream maker and store in freezer until ready to serve.
Makes 4 quarts.
