The classic poutine gets a makeover with crispy sweet potato fries and an herb cheese sauce that can be served as a main dish or appetizer. Simply sprinkle frozen sweet potato fries with kosher salt and bake while you prepare the cheese sauce. For the sauce, cook bacon, shallots, and garlic, adding flour and milk to form the cheese sauce. Then all that is left is to top the fries with white cheddar cheese curds, cheese sauce, and crumbled bacon.
