Celebrate National Dairy Month With a Farm-to-Table Recipe

It’s summer, and that means farmers’ markets and backyard gardens are bursting with fresh local produce. National Dairy Month is the perfect time to enjoy fresh fruits and vegetables paired with dairy foods.

Milk provides calcium, vitamin D, and potassium – three of the four nutrients that most Americans are lacking. Add fresh fruits or vegetables and you’ll add fiber to the mix, the fourth nutrient of concern. Beyond the nutritional benefits, dairy foods and produce make a tasty combo. 

Cheesy Corn Fritters

Corn is loaded with fiber, and because it’s naturally sweet, it’s a great way to get in a serving of vegetables for even the pickiest of eaters. This recipe beautifully pairs the sweet corn with sharp white Cheddar cheese. Cheese is a good source of high-quality protein and contributes other essential nutrients, such as calcium, phosphorus, and vitamin A, to the American diet. Those with lactose intolerance can enjoy natural cheeses like Cheddar and Swiss, which are low in lactose yet still provide important nutrients. Nutritious milk is also part of the batter, along with flavorful chopped green onions and fresh parsley.

Pair the crispy, browned fritters with a creamy dipping sauce that’s reminiscent of sour cream and onion dip. The base of the sauce features plain Greek yogurt instead of the typical mayonnaise or sour cream base. When you substitute Greek yogurt in place of sour cream or mayonnaise in a recipe, you increase the nutrients, including protein and calcium, and decrease the fat and calories. Stir in some green onions, fresh parsley, garlic powder, salt, and paprika for a big pop of flavor. These fritters are the perfect way to use up fresh summer corn and work well as an appetizer for entertaining or as a main dish paired with a nice green salad for a light summer supper.
