Add Fruit To National Taco Day
One of my favorite days, National Taco Day, is finally here! Celebrated on October 4th, it is estimated that over 4.5 billion tacos were consumed last year in America alone. Tacos are so versatile and delicious for breakfast, lunch, dinner, or dessert - the possibilities are endless! Itβs no wonder tacos get their own special day.
Commonly served on a flour or corn tortilla shell, the most well-known fillings include beef, chicken, pork, lettuce, tomato, cheese, salsa, sour cream, and guacamole. On the rise, we are seeing more seafood-based tacos made with different types of fish, shrimp, or crab. Not to mention, the topping choices are becoming limitless, with options like bell peppers, onions, beans, a variety of salsas, fresh herbs, or even coleslaw! If youβre looking for a twist on the traditional taco, try these tasty Fish Tacos with Mango-Lime Crema or top your favorite taco with a new topping like this Asian Slaw, a personal favorite of mine.
Have you ever thought about filling your tacos with fruit? Fruit tacos are a great way to start the day off βeating the rainbowβ or to satisfy your sweet tooth at the end of the day. Itβs as easy as grabbing a tortilla, filling it with your favorite fruits, and topping it off with Greek yogurt or cottage cheese! Dairy foods provide high-quality protein to help you feel full longer and provide calcium and vitamin D for better bone health.
Here are a few of my favorite seasonal fruit taco combinations:
Winter: apples, cranberries, and grapefruit
Spring: strawberries, blueberries, peaches, and mango
Summer: cantaloupe, pineapple, kiwi, and raspberries
Fall: apples and pears
Recipe tip: toss the fruit with cinnamon and nutmeg or drizzle with a little honey to add extra sweetness.
