Smith Boiled Custard

1 cup sugar
1⁄4 teaspoon salt
1⁄4 cup cornstarch
4 egg yolks
4 cups milk
1 teaspoon vanilla
1⁄2 teaspoon grated nutmeg (optional)

In a medium mixing bowl, mix sugar, salt and cornstarch together. Next, stir in egg yolks and mix well. After these ingredients are mixed well, pour into heavy-bottomed sauce pan or double boiler. Over medium heat, gradually add milk. Bring mixture to a boil slowly. Continue to stir and cook until a spoon coats when dipped it in the mixture. Add vanilla and stir. Place in refrigerator and serve cool. Sprinkle with ground nutmeg, if desired.
