Santa's Favorite Chocolate Peppermint Cookies

Every year on Christmas Eve, children worldwide spend the day scrambling for ideas of what cookies to leave for Santa to munch on while he carefully places gifts under the tree and fills the stockings to the brim. We know Santa, devouring various flavors of cookies on Christmas Eve night, isn't picky about holiday treats. Try these delicious chocolate peppermint cookies to have Santa eating every last crumb!

Ingredients

  • 2 sticks softened butter

  • 2 large eggs + 1 egg yolk

  • 1/2 cup cocoa powder

  • 2/3 cup all-purpose flour

  • 1 tsp salt

  • 1/2 tsp peppermint extract

  • Peppermint baking chips

  • 3/4 cup granulated sugar

  • 3/4 cup packed brown sugar

  • 1 1/2 tsp vanilla

  • 1 tsp baking soda

  • 8 Tbsp. unsalted Butter

  • 1 cup semi-sweet chocolate chips

  • Crushed candy canes

Directions

  1. Preheat oven to 400 degrees Fahrenheit.

  2. In a large bowl, cream together sugars and butter. Mix until light and fluffy

  3. Crack eggs into a separate bowl and add them to the mixer one at a time. Add Vanilla. Mix until dough is again light and fluffy

  4. Add cocoa powder, mixing until it's well incorporated. Add baking soda and salt. Mix in flour one at a time.

  5. Gently stir in 3/4 of the bag of peppermint baking chips

  6. Line two baking sheets with parchment paper. Use a food scale, form 6-ounce dough balls and add to baking sheet, four dough balls per sheet. Bake for 10-12 minutes

Peppermint Drizzle

  1. In a microwave-safe bowl, melt chocolate chips for 1 minute in the microwave. Stir and continue to melt in 15-second increments until the chocolate is melted. stir in peppermint extract.

  2. Place melted chocolate in a piping bag or in a Ziplock bag (cut the corner to drizzle.) Drizzle onto cooked cookies and top with crushed candy canes and enjoy with a glass of milk!
